Go big or go home

Howdy, y'all ... and Friday!

Last night I got home and I felt like my stomach was going to eats its spleen I was so hangry!  I decided to go big or go home and threw together a beast of a salad.  My mom had a trough of leftover salad from their dinner so I threw pork chops and sauteed apples and onions on it.  I know, sounds weird, but I swear my mouth still has those strong and awesome flavors in it (yes, I brush my teeth).


Yuuup.


This morning I woke up and made an egg with 3 oz of chicken and about 5 walnuts.
Insert a trip to Trader Joe's, work work work, a coffee break and a pilates class

I ran home to eat a 3oz turkey burger, carrot and celery sticks with 1 tbsp almond flax butter and baby heirloom tomatoes with basil on top.  So random like my dinner last night, but it worked.





Tonight I will most likely have chicken sausage with roasted red peppers.

I am thrilled its Friday.  I am hoping the weather stays this perfect.  I am so excited to tell you all that the new blog is still in the making, but will soon be up!  Things take a little longer than expected, ya know?! My food store trip.

I hope you are all in relaxation mode right now!

Today I had a productive day.  I fit in my fitness, cleaning, food shopping, and some time to myself in Pennypack Watershed.  

Check out what I bought home from Fresh Market.


Blueberries, sunflower seeds, cage free eggs, avocados, coconut milk, lime avocado salsa, zucchini and squash, and two 1/2 lbs of white meat all natural ground turkey.  


The seeds, blueberries, eggs, and avocados make for great snack options. The turkey, eggs, veggies and salsa can be cooked up in several ways to make some awesome meals. I'm set. 


When I was off getting lost in the woods, I came across a little family of ducks.  Too cute.
I love clearing my mind while hiking in Pennypack.  I always seem to leave there clear and level headed.  Amazing what a walk/hike/run can do for your mood :)

Next time you find yourself in a slump... lace up your kicks and take it to the pavement.  That is the healthiest way to beat the blues.

Nutritious food :)


I hope you all are getting gussied up to go somewhere fun!  I am sitting this Friday night in because I am exhausted.  Nothing makes me happier than a nice restful night sometimes.  Remember the bee I talked about yesterday?  Proof I wasn't fibbing ;)

I promised you pictures and I delivered...


Scrumptious bowl of paleo cereal for breakfast


Strawberries, dried pear crisps, almonds, sunflower seeds, coca nibs, coconut and coconut milk


Lunch doesn't look too appealing and despite the smell of canned tuna, I am a sucker for it.  This was gone in two minutes flat!


Ooooooo, dinner was definitely something to swoon over.  Bacon, caramelized onion and orange zest egg white omelet with jicama chips on the side.  I am still licking my lips from this one.
Because I am going to hold myself completely accountable, I also had an ice coffee mid morning and snacked on baby carrots and turkey mid afternoon.

Yesss, its the weekend.  Enjoy.
